Sweet New Pie Trick
I was searching the endless see of Pinterest recipes for thanksgiving one day . I usually make all the pies for Thanksgiving . My mother told me that she noticed something . That after she would eat my pies that she would get heartburn really badly . In an attempt to figure out the cause of it . You switched to fresh vegetables and baking it in the oven . She said after that she had no problems with heartburn after the switch .
When I started on the baking road . You just go to the store and get what you need . It all came out of cans so who cared right ? Wrong once my mom started having heartburn and other issues. She had to switch up the way we ate . Once you track down what the cause is . Fix it and keep on trucking . That’s the fun part of baking . Making it your own but sticking to your guidelines . In case you’re wondering it was the can sweet potatoes that were giving her heart burn . Now I just bake my sweet potatoes or pumpkins in the oven . It tastes way better and you get some nice vitamins to with it .
How To bake Sweet Potatoes
1: preheat oven to 375
2: spray the sweet potato with coconut oil
3: take sweet potato and prick with fork all over
4: wrap in foil
5: put in oven for 45 to 50 mins or till done
Recipe For Coconut Sweet Potato Pie
2 medium size sweet potatoes
1/2 cup of coconut oil
1/2 cup coconut milk (can use silk coconut milk )
2 large eggs
1/2 teaspoons of cinnamon
1 teaspoon of vanilla extract
1/4 cup maple syrup
1/2 cup granulated sugar or 1/4 cup of stevia
2 teaspoons of lemon juice
1/2 teaspoon nutmeg
pinch of sea salt
Preheat oven to 375 bake pie for 45 to 50 minutes depending on oven . stick a butter knife in the center of pie . it will come out clean when ready .
Tip * turn off the oven and leave oven door crack open so that the top of the pie will not crack .
Tip* if it ends up cracking anyways your can always make a meringue to cover up the cracked top or in my case toddler poked finger in pie LOL
